BASIL | $3.00 (Ocimum bacilicum) Our most popular herb, our broadleaf Basil is richly fragrant and aromatic. We purposely maintain as large a leaf size as possible to lock in essential oils so that when you crunch up its leaves just prior to cooking, the aromas and flavors developed in the field are still there for you to savor in your kitchen. Use with tomatoes, mushrooms, eggs, and of course, all pasta dishes.
BAY LEAVES | $3.00 (Umbellaria californicus) This is California Bay and it has a different flavor from the Mediterranean Bay. Use it in stews, rich sauces and marinades.
CHILI FLAKES | $3.00 (Capsucum annuum) These Chili Flakes are from the chili de arbol, a medium to short, red chili that has good heat. So use with discretion. If you don't have enough discretion, cold milk will help. Use these on pizza, in pasta sauce, in marinades. Also add Chili Flakes to the pan when you saute vegetables in garlic and olive oil. But remember....discretion.
GARLIC POWDER | $3.00 (Allium sativum) What can we say about Garlic? It can be used in anything, and on anything. Marinades, scrambled eggs, omelets, stews, sauces, salads, stir fries, grilled meats....all benefit from Garlic. And Garlic is so good for you.
LEMON THYME | $3.00 (Thymus x citriodorus) You don't find Lemon Thyme in many places, and that's a shame. Its lemony aroma and flavor add to salads and eggs dishes. Try it, you'll like it.
MARJORAM | $3.00 (Origanum marjorana) A sweet, delicate flavored herb, Marjoram enhances eggs, salads, rice, potatoes, vegetables, any kind of meat dish, and of course, all pasta dishes.
ONION FLAKES | $3.00 (Allium cepa) These Onion Flakes are terrific with any saute...vegetables, meats, chicken, etc. They add good flavor to marinades and any sauce.

OREGANO | $3.00 (Oreganum vulgare) We searched long for a strain of Oregano that has such intense varietal character. A cousin of Marjoram, Oregano has a stronger flavor. It will stand up well in rich tomato sauces and is excellent on pizza. It is at the heart of Mediterranean cuisine
ROSEMARY | $3.00 (Rosmarinus officinalis) This richly green and fragrant herb reminds you of pine forests with its fresh, clean aroma. A natural accompaniment to lamb, Rosemary is also excellent with eggs, potatoes, beets, squash, cheese dishes and of course, all pasta dishes.
SAGE | $3.00 (Salvia officinalis) Sage is the mainstay of poultry dressings as we all know. But it is also excellent with pork, duck, and sausage dishes.
SUMMER SAVORY | $3.00 (Satureja hortensis) Summer Savory is a wonderful addition to gentle flavors such as beans or potatoes. It has a subtle spiciness, not quite as vivid as Thyme, and therefore not so overpowering. Use with egg, vegetable soup or meat broth.
TARRAGON | $3.00 (Artemisia dracunculus) This French Tarragon is a bit tricky to grow. It can only be propagated by cuttings or crown division, (at least that's the only way we've been able to do it.), and it is very picky about what soils it will grow in. But over the years we've been able to maintain and increase our acreage of this wonder herb. Its licorice flavor is excellent with fish and poultry. It is a wonderful flavor adder to olive oil in salad dressings, or in vinegar. Tired of Hollandaise sauce? Add Tarragon and now you have Bearnaise sauce.
THYME | $3.00 (Thymus vulgaris) This pungent, spicy plant grows in compact, tightly knit form, about 12 inches high. Just walking in a field of it makes you smell of it. We use it extensively in marinades, stuffings, soups, and anything that uses a little "zip" in its flavor. Use with fish, chicken, vegetables, and of course, all pasta dishes.
